I have Scott albums and am interested in printing custom pages. Since the Scott pages are bigger than 8.5x11, I will need a printer that would handle larger size sheets. Anyone have any recommendations? Black-only would be acceptable as I prefer black-and-white album pages.

I have thought of the Canon Pixma Pro 100 printer. It can do 11"x14" paper. It is colour though & does a great job on photos. it is around $400, but is regularly priced at ΒΌ of that every so often. I'd also point out that it has been around for a couple of years, so maybe there is something better out there now.
Not sure if there are any large format lasers, but that would be a great choice if you just want black printing.

Consider looking at the Epson Workforce series. I have the Epson WF-7610, which is a large-format scanner and printer. I bought it for the scanner, for the times when I wanted to scan full album pages (Scott & Minkus), but it has now become my regular printer. (I usually use a better Epson scanner (photographer's scanner) for high-resolution scanning of stamps.)
The maximum scan size is 11x17", and the maximum printer page size is 13x19".
I've been very happy with it, and I had mentioned it to a philatelist friend of mine, and he picked up one, too, and has also been very satisfied with it.
I bought it on sale at OfficeMax maybe 2 years ago for about $120. I had no idea I'd be able to find a large format scanner (much less printer) at that price.
There are no doubt newer models out there and no doubt some competitive prices possible.
By the way, this is an ink-jet printer (with 4 cartridges: black, blue, magenta & cyan).
Oh, one other feature that I really came to like is that it's completely wireless, for printing and scanning. (My older Epson dedicated scanner - Epson Perfection V500 Photo -- requires a USB cable connection.) It's nice not having to mess with cables.

I actually just purchased the Epson Workforce 7710 at Staples 1 1/2 weeks ago. I have not actually started using it, but it was probably the best deal I've seen lately. It was on sale for between $150 and $180. It is a color inkjet (so, as noted in previous post, requires multiple cartridges). It is wireless as well. I've been happy with a previous Epson Workforce printer (which I have used a lot for scanning), however, it is not wide format.
Since I like black backgrounds, I tape black cardstock to the lid of the scanner (which is normally white).

I was looking online at the Epson Workforce 7710, which seems ideal for my needs. But I'm wondering if the paper-input tray is fully adjustable for paper size or if it just has pre-set settings for paper size.

I believe the tray is adjustable to paper size, if I recall correctly when I looked at the display model. (As mentioned, have not set it up yet.) Will probably get it up and running next few days, and I'll provide some additional feedback.

Here's how to get a special deal and special price on virtually anything (especially tech) from eBay. I do this all the time. In your case, browse printers, and open 6 or 8 listings for a moment, and even visit sellers' Stores. Not sure if it would help to "search" for "oversize printers" or some such term.
But within a day, your emailbox will be flooded with offers and deals for that type of item. That's how they zero in on your high-dollar (relatively) interests, and of course they are eager to strike a deal before you buy somewhere else. Open all those deals but don't act yet unless there's something spectacularly cheap. In a few more days, eBay will be frantic, and very soon, you'll see those week-old deals come down too. Be sure to browse the cartridges too, etc.
BTW, I have numerous wireless items, and very happy with them. Try to keep your mouse and [desktop] computer on the same side of the monitor to avoid signal blocking or freezing. This issue doesn't come up with laptops or tablets.
