My experience with ATM labels of various countries is that they are best left on cover or on-piece rather than soaked off in water or removed with Pure Citrus. Is that the case for Spanish ATM labels as well? Does anyone have any insight as to how these are collected in Spain and Europe generally? Should they be trimmed as these are or should a larger paper margin be left around the label? Like anything else, being a worldwide collector I would like to incorporate these into my Spain collection as well.

What I collect: If I have a catalogue for it, I collect it. And I have many catalogues ....

The adhesive on these labels is not soluble in water, so soaking them won't ever accomplish anything except to damage the image, which on these Spanish labels is printed with an ink which is slightly soluble in water. That is, if you leave them to soak a long time, nothing will ever happen with the adhesive, but the image will start flaking off!
The adhesive is soluble in chemicals but I don't think too many people fuss with them in that way. A further problem with these labels is that they are printed with a thermal process, the same as with fax machines or cash register receipts, and the printing can fade with age. The oldest of the labels (the ones without the scallop cut on the narrow edges, like the two you have with lots of yellow on them) seem to have the least stable paper and the thermal printing fades more on those labels than it does on the more modern ones. Just like a fax or a receipt, if you leave it out in the open on a desk, it will fade more quickly than if it's in a file folder and not as exposed to the environment (UV light is mostly the problem, I think, but humidity makes a difference too).

Thank you for the advice Ryan. Housed on a page, sandwiched in an album will perhaps slow the deterioration over time so that's where they will go. No soak and trimmed.

Perhaps fans of Spanish vended postage will find inspiration from this exhibit:
