I came across a term in this hobby a while back and now I can't think of it. It's like a mix of topical, commemorative, covers, etc. For example, say the topic was a city. There's some stamp showing something famous in the city. You get it postmarked by a post office in the city. Maybe's it's on a special cover or postcard of the city. It's like you layer all those things together, and now you have something maybe more rare than each item alone. Can anyone think of what that's called?

Yes these elements relate to many special events covers, first day of issue, and souvenir covers and cards.
Maximum cards where a stamp is tied to a picture postcard by a cancel that connects the theme form a strict collection area in Exhibition philately .

What I collect: My focus is on Wild Mammals on maximum cards. Occasionally, I get or create maximum cards with other animals, or any other topic.

Yes, a maxicard (maximum card) is a 3-layer collectible. So is any cover (envelope), souvenir page, etc., if there is at least 1 postmarked stamp on that paper (or other material) support.
